Bagels

For about 10 bagels you need:  


500 g flour (eg 150 g spelt wholegrain flour and 350 g wheat flour 405)

1/2-1 cube of yeast

1 tsp salt

2 tbsp olive oil

300-320 ml of lukewarm water


Make a yeast dough from these ingredients and let it rest for at least 1 hour (preferably over night).


Then form 10 balls from the dough and press into each a hole of about 4 cm in diameter.

Let the bagels rest for another half hour. In the meantime, boil water in a saucepan. Add 1 tbsp honey to the water and dip the bagels carefully for about 20 seconds each.


Bake at 200ºC for 15-20 minutes.
