Bretzels

For about 10 pretzels you need:  


500 g flour (for example 100 g spelt wholegrain flour and 400 g wheat flour 405)

1/2-1 cube of yeast

350 ml lukewarm milk

1 tsp salt


Make a yeast dough from the ingredients and let it rest until it has doubled (eg over night). Then knead the dough well and form into a roll about 20 cm long. Divide into about 10 equal pieces, roll them into long strands and form pretzels.


Bring about 1.5 L of water with 2 tablespoons of household soda to a boil for 10 min. Then put the pretzels in the boiling water for about 20 seconds. Place on a baking sheet and bake in about 25 minutes 180ºC.
