We need:
250 ml milk
125 ml olive oil
1 egg white
1 egg yolk to brush the pastries
1 tablespoon salt
1/2 cube of yeast
500g flour (e.g. 100 g wholegrain spelt and 400 g wheat or according to your taste)
100 g feta cheese

Dissolve the yeast in the lukewarm milk. Add oil, egg white and salt. Finally, add the flour gradually, knead into a dough and let it rest until it has doubled.
Knead briefly again and form into balls of about the size of a clementine. Let them sit for 1 hour. Crumble the feta cheese with a fork and mix with chopped parsley as desired.
Press the dough balls flat, place the cheese in the middle, roll up and shape into buns. Brush with egg yolk and sprinkle with sesame or nigella seeds.
